The Niedlov’s team is made up of people from all walks of life, from those looking for work after incarceration to seasoned bakers. but our philosophy does not change: love and respect one another so that we can continue to make bread for our community.
Hiring: In 2017, Niedlov’s partnered with Troy Rogers, city of Chattanooga’s Public Safety Coordinator, to employ ex-convicts coming out of prison. To date, Niedlov’s has employed 30+ ex-convicts at our bakery and given them a chance to have employment after incarceration. We also offer employment to refugees in the Chattanooga area, often partnering with Bridge Refugee Services. To date, Niedlov’s has employed 20+ refugees. Some of these employees have worked with us for 6+ years. With this in mind, Niedlov’s created a “NIEDLOV’S FUND” with Metropolitan Ministries to address employment barriers for ex-offenders and other marginalized people in our community, and focuses on supporting people while going through difficult life events. Donating: We donate over 400 loaves a month to the Chattanooga Community Kitchen. We have also donated over 5,000 breakfast sandwiches to the Chattanooga Community Kitchen. As well as, 2,500 pastries and 1,500 cups of coffee to our local healthcare providers.
Composting & Waste Diversion: Niedlov’s Bakery & Cafe maintains an active composting program in partnership with NewTerra Composting Co. We compost roughly 1,300 lbs of food waste each month, which diverts over 15,000 lbs of food waste from our local landfill each year. Any pastries and breads that are not purchased by the end of the day get donated and delivered to the Chattanooga Community Kitchen. Any goods not suitable for human consumption get donated to several local farmers to feed their pigs!
Local Sourcing: We partner with as many local providers as possible, to name a few: The Chattanooga Food Hub, Main St. Meats, Crabtree Farms, Alchemy Spice Co., Midway Mushrooms, Possum Bottom Mushrooms, Harrison Bay Honey Farm, Short Mountain Cultures, Wasawillow Farms, Wheeler’s Orchard, Sequatchie Cove Farms, Wooden Spoon Tea Farm, Southerly Flower Farm, Bean & Bailey Ceramics, and others.
